Choosing Your Wedding Cake Flavours
Your wedding cake should be the best cake you ever eat.
That means more than just tasting nice. Good flavour (or mouthfeel if we’re being technical) is about making a light, soft, moist (sorry!) cake that has a delicate but rich balance of flavours. Regardless of whether it is a delicate vanilla or zesty lemon, you and your guests should be able to identify the flavour immediately.
To make the best wedding cake flavours, I pay attention to 3 things:
- I choose my ingredients carefully – professional grade, best British quality, high welfare (more about that on my eco page)
- I mix the ingredients delicately by hand or hand mixer
- I look after each cake carefully when baked to lock in moisture and softness, and it’s never frozen, so that you can enjoy your cake on the day and for days after
I want you to taste your cake and know that it was worth every penny. I want your guests to be surprised at how good a cake can taste.
All of my flavours have been tested and perfected over the last few years so I know they are some of the best wedding cake flavours you will find in the UK.

What does a wedding cake look like on the inside?
Every cake is made up of 4 individually baked, hand made layers of fluffy sponge and 3 layers of flavourful fillings.
Buttercream (and semi-naked) cakes are coated in a layer of buttercream, while fondant cakes are coated in a rich truffley chocolate ganache and luxury fondant.
All wedding cakes come with flavour cards so that your guests know what they’re eating. These cards show allergens on the back for each flavour, and list the sustainble ingredients used e.g. organic butter, Fairtrade sugar.
Where do we start with choosing flavours?
Most of my couples pick one crowd pleaser flavour and then one or two of their favourites. My most popular crowd pleaser flavours are:
- Vanilla with strawberry jam
- Vanilla with blackcurrant jam (my favourite flavour!)
- Chocolate orange
When it comes to choosing their personal favourites, according to my couples, the best wedding cake flavours are:
- Sticky toffee
- Raspberry and white chocolate
- Chocolate caramel
- Orange and poppy seed

If you’re struggling to narrow down your options, I always recommend thinking about the time of year that you’re getting married. Naturally, we associate seasons with certain flavours and feelings. So Winter and Autumn give us rich, chocolatey feelings and Summer and Spring give us light, fruity feelings. Choose your consultation flavours…
And of course, at your consultation, you will try at least 4 flavours of cake. If you know the flavours you might like, then pick these and enjoy! If you still need a little help to narrow down your options, I recommend choosing a mix of sponge and buttercream flavours rather than the exact combinations you might be considering. So you might pick a chocolate orange, vanilla strawberry, raspberry white choc and sticky toffee (or swap choc orange and sticky toffee for carrot and choc caramel). That way you can mix and match your favourites to get the perfect combination for your wedding cake. Remember – you don’t have to pick your consultation flavours for your final cake!

Classic Victoria Sponge
My classic vanilla sponge, flecked with real vanilla seeds and filled with classic buttercream and a British strawberry jam (can also be swapped for British raspberry jam).
Vanilla & Blackcurrant Jam
My classic vanilla sponge, flecked with real vanilla seeds and filled with classic buttercream and a sharp, fruity British blackcurrant jam.
For the fruit lovers…
Vanilla & Blackcurrant
My classic vanilla sponge, flecked with real vanilla seeds and filled with a sharp, fruity blackcurrant buttercream (can also be swapped for a raspberry buttercream).
A delicious lemon sponge, filled with a tart lemon buttercream (can also be made with orange or lime).
Coconut & Lime
A creamy coconut sponge filled with a punchy lime buttercream.
Raspberry & White Chocolate
My classic sponge studded with white chocolate chips, filled with a sharp, fruity raspberry buttercream.

A modern classic, red velvet is slightly chocolatey with an edge. Featuring a bright red, slightly chocolatey sponge, it is filled with a cream cheese tasting buttercream.
A light, caramelly sponge, filled with my homemade salted caramel buttercream.
Coffee & Walnut
A rich, coffee sponge, studded with chopped walnuts and filled with a coffee buttercream. Ganache coatings would also be coffee flavoured.
A super light spiced sponge, studded with finely grated organic carrots and chopped walnuts, it’s filled with a tart orange buttercream.
Sticky Toffee Pudding
A rich date sponge, filled with my homemade salted caramel buttercream.
A warmly spiced gingerbread sponge, filled with a speculoos caramelly buttercream.
Rum & Raisin
A classic sponge studded with raisins soaked overnight in dark rum, filled with a dark rum buttercream.
A rich, dark, sticky, spiced fruit cake studded with apricots, cherries, raisins, sultanas, currants, and mixed peel, coated in a light marzipan.
For the foodies…
Orange & Poppy Seed
An orange sponge speckled with poppy seeds and filled with a tart orange buttercream.
A herby, lightly floral lavender sponge, filled with a lavender and lemon buttercream. This is one of my signature flavours, it will definitely surprise you! The lavender has an earthy, herbiness to it (almost like rosemary) with the lemon lightening up the flavour to create a really nicely balanced summery combination.
